Head Chef Byung Sam Moon
Everyone calls him ‘Mr Moon’ due to the high level of respect he has earned over the years. He has been running our kitchen since December 2005, which in Lake Louise is a long time!
Prior to that, he came directly from Seoul, Korea where he worked in a number of kitchens including a high end hotel the Shilla Hotel for four years, preparing diversified cusines such as authentic Japanese, French and Italian food. He also was the kitchen manager for five years for Samsung in the National Assembly Building. In 2000, he received the gold medal at the Seoul International Cooking Contest for 3 course Italian Food. We are proud to have him running our kitchen brigade!
Sous chef Hyojin Hyun
Many team members refer to her as Ms Hyun in the kitchen, but she has also gained her respect over the years assisting running the kitchen for almost seven years at the Mountain Restaurant. She also came from South Korea working in various kitchens, such as the Plaza Hotel in Seoul for 3 years. In 2005, she received two Gold medals for best Hot and Cold Cuisine at the Seoul International Cooking Contest. She has extensive experience in menu planning, inventory management, training new cooks entering the industry and assisting us with developing new seasonal menus throughout the year. We are especially happy to have her in our kitchen especially in the busy summer months!
